I doubt it can recognize Voynichese specifically, it probably processes the glyphs as generic characters (it apparently can recognize them as "writing").

That's what I'm thinking too. It may be that there are specific "writing" procedures built into image generators now, seeing how text was initially a major obstacle.
So I think that maybe when it recognizes something as "writing", it tries to maintain the characters, while still being able to change their appearance.
