The reading poxleber = Bocksleber was challenged since p- for Bock was considered unusual in early written German. 

What makes you say that? Do u have a source? As far as I know, this p/b spelling was very common for example in Bavarian manuscripts in the 15th century, and it wasn't even very consistent: b and p often alternate within the same text.
